We were here two days ago and now we’re back. Currently the US’s fastest growing pizza chains, Pieology Pizzeria is so far one of our favorites.

Owner’s background
It’s founded by Carl Chang, 48, CEO of Redwood Real Estate Partners, Kairos Investment Management, Chang Family Office. Chang was born in Hoboken, New Jersey and went to the University of California, Berkeley on tennis scholarship. he graduated in 1991 with a degree in business. After joining the professional tennis league, he decided not to play and instead become his younger brother Michael’s coach. Michael Chang at 17 became the youngest man to win a Grand Slam singles title in tennis. Michael won the 1989 French Open. In 1996, Carl Chang was named Coach of the Year by Tennis magazine.

Carl launched Pieology in 2011. Their chain has since grown to 60 in 2015, 84 in 2016 and by this time, there must be over 100 branches in dozens of states. Panda Express bought a minority stake in Pieology.

At US$8.99 each, we are able to pile our thin crust pizza with several toppings of our choice, three sauces, two kinds of cheese. Whatever we choose, they all taste well together.

Edmund wanted to order one for him one for me, hindi ko mauubos, sobrang dami.

This is supposed to be a thin crust pizza but made fatter by lots of toppings. Red sauce, herb butter, pesto sauce, mozarella, parmesan cheese, ham, salami, black olives, fresh mushrooms, green bell pepper, pineapple tidbits, green jalapeno, bacon, basil and cilantro.
I sprinkle mine with dried chili and more grated parmesan. Delicious!
