Ever since Edmund told me that we were going back to Iloilo, the only thing that I looked forward to doing again was to go to that nondescript compound in Molo district, to eat the best hot steaming pancit molo or pork dumplings soup by Kap Esing or Ising. And we did just that yesterday afternoon.
The compound belongs to Kap Esing and his siblings.

The fine dining area should not deter you from enjoying the best molo in town.
If you don’t like to stare at the sinampay while eating, Kap Esing has a branch at GT Mall. But it’s not a restaurant either. It’s a tiny space and far from looking like a resto. But do not be turned off by the appearance. If you are a donya, just send your driver to Kap Esing with your own caldero.
Dozens of hungry people come here as early as 7 am to have steaming hot molo soup. Edmund and I arrived a few minutes before 5 pm. We were the last to have the soup. Two tourists were turned away because Kap Easing had ran out of the broth. There was still a steady stream of customers bringing their own calderos. Kap Esing supplies to dozens of big restaurants in Iloilo.

Edmund ordered 4 pieces of fresh lumpia ubod. I told him to order only two kasi we might not be able to finish four. I ate one piece.
The soup is served in a caldero depending on how many you are or for how many people.
Edmund wanted to order good for three persons. Sabi ko good for two lang. Buti na lang, eksakto lang. P100 for the small caldero good for two px. Basta the price is P50/order.
I think it’s safe to say that this is the best pancit molo soup in Iloilo City.
This is the kapitan behind the delicious dumplings everyone is crazy about including me. He’s a kapitan del baryo or barangay captain that’s why he’s called Kap Esing or Kap Ising. ,
